Ingredients
– Traditional Tuscan bread (preferably 1–2 days old)
– 1 clove of garlic
– Salt and pepper to taste
– IGP Toscano extra virgin olive oil
Preparation
Cut the bread into thick slices, so that the outside is crispy, but the centre remains soft. Cook the slices over a wood fire or on a sizzling griddle, turning them on both sides until they are golden brown. As soon as you take them off the heat, whilst they are still piping hot, rub a clove of garlic over one side of the bread. The heat will cause the garlic to melt slightly into the bread. Finish with a pinch of salt, a grind of fresh pepper and pour a generous amount of IGP Toscano extra virgin olive oil.
